What is food transformation?
Food processing is the transformation of agricultural products into food, or of one form of food into other forms. Food processing includes many forms of processing foods, from grinding grain to make raw flour to home cooking to complex industrial methods used to make convenience foods.
In Cameroon, bananas and plantains (Musa) play an important role in the population’s diet. There are many food uses of these crops relative to the eating habits of consumers. Our Objective is to transform Plantain and Banana in general to flour which is more preferable to the body than corn flour. Plantain flour is a healthier substitute for wheat flour and the all-purpose flour because it doesn?t contain gluten which is the main protein found in wheat and barley, has negative effects on the body. Many people are unable to digest the gluten in wheat.
Unripe plantain is a natural source of resistant starch that helps to reduce blood glucose levels, so it is considered an excellent ingredient for food fortification.
